Greens, Grains and Seeds Salad Recipe
Need some leftover cooked grains such as brown rice or quinoa
3 cups chopped greens (about 5ozs) (Spinach, Kale, Romaine)
1 cup vegetables, chopped such as carrot, avocado, steamed broccoli, green or yellow peppers (may use a mixture)
1/4 cup cooked, cooled grains (see prep note)
1/4 cup nuts or seeds of choice
2 T extra virgin olive oil
1 T lemon juice
salt and pepper to taste
Toss all ingredients together in large bowl and serve.
The addition of fruits or raisins make a nice twist to this all savory salad. Try adding 1/2 cup diced peaches or berries (either fresh or frozen) or 1/4 raisins.
