Paradise Fruit Salad Recipe In A Jar

Paradise (fruit salad in a jar)

Yields

1 Pint Jar serving

Ingredients

½ teaspoon honey *
1 or 2 small fresh mint leaves (if desired)
4 to 5 ounces of full fat plain Greek yogurt (2% fat will also work)
½ teaspoon of grated coconut flakes (unsweetened)
½ kiwi sliced and halved
1 wedge of melon, peeled and chopped (about 1/8 of cantaloupe or honeydew or about 1 cup)
1 handful of ripe berries (raspberry, blueberry, strawberry,etc.)
2 or 3 chopped nuts of choice (walnuts, pecans or almonds)
Greens of choice (I think spinach is the best option here)

Directions

Layer ingredients in the glass jar as listed.  It is OK to pack your salad greens so that the jar is tightly filled (in fact this is preferable).  Put on a tight fitting lid.  Store in refrigerator up to 3 days until ready to eat. (A time saving idea is to make several at once for lunches during the week.)
When ready to eat, give your jar a few good shakes!(Built in exercise!)  Empty contents of jar onto a plate or into a nice size bowl. Lettuce will be on the bottom and all the yummy toppings on top. Enjoy!

Notes

* tip: to get your honey to slide off the measuring spoon, dip the spoon into coconut oil first and then pour the honey onto spoon!
Different fruits will work here.  I have used peaches and grapes as a combo.  You could also use banana slices in place of melons.  Experiment with what is in season and according to taste.
