Raw Cacao Mousse

Coating the measuring cup or spoon with a little coconut oil before measuring the maple syrup will allow the syrup to glide off the utensil and into mixture without trying to scrape it off. If you see cacao powder clinging to sides of blender, stop and scrap down the sides with rubber spatula and resume blending.

Cooking Time



about 6 servings


3 ripe avocados 1 cup raw cacao powder 2/3 to 3/4 cup almond milk 1/4 C maple syrup slight pinch of sea salt dusting of cinnamon (optional)


Place all ingredients in blender or vita mixer or food processor and blend at high speed until silky and smooth consistency (2 minutes or so) Dispense into serving cups, glasses or other pretty container and chill for 4 to 6 hours ( more is better). When ready to serve you can dust lightly with cinnamon and a few cacao nibs if desired.  I also think fresh organic raspberries or strawberries make a nice garnish.
