Ingredients
4 cups of 1 to 2 inch chunks of watermelon
4-6 ounce feta cheese, coarsely crumbled
1/2 cup chopped mint or fresh basil
1/4 cup extra virgin olive oil
3 Tbsp. fresh lime or lemon juice
Pinch of salt and ground pepper
Directions
Combine in a large serving bowl combine the oil, citrus juice and seasoning. Add watermelon, cheese and mint to the bowl and gently toss to combine flavors. Chill 2 to 4 hours before serving.
Notes
you can also serve on top a bed of fresh crisp romaine lettuce
