Veggie Turkey Meatloaf Recipe

Chop onion and peppers. Grate or dice carrots.
Or if preparing for picky eaters or small children, process above in food processor until very fine. (this is even quicker!)

Ingredients
1 pound organic ground turkey meat
½ cup organic rolled oats (uncooked)
1 cup or 8oz can tomato sauce (reserve 1 T to drizzle ontop)
1 egg beaten
1/3 c chopped onion
¼ c chopped bell pepper (yellow, red or green)
1 carrot diced or grated
1 tsp Herbamare organic season
¼ tsp garlic powder
A few shakes of Worcestershire sauce
1/2 tsp pink Himalayan salt
A dash of Italian seasoning
Directions
Mix everything together in a mixing bowl. After mixing well, transfer to lightly oiled(I use olive oil) baking dish and drizzle the reserved tomato sauce over the top.
Bake in 8×5 loaf pan or 9×9 square baking dish at 350 for about 1 hour. Let cool 5 minutes before slicing/serving
Notes
if you are not familiar with Herbamare, you can increase the other seasonings slightly and add 1/4 tsp of either ground black or white pepper.
Meatloaf is a classic family favorite often served with mashed potatoes. While your entree is in the oven, you can prepare a hearty salad or fresh steamed green beans to compliment the meal. Cooked and whipped turnips are an excellent side to replace the usual mashed white potatoes or try using sweet potatoes when in season. You can make dinner even easier by baking the sweet potato (or yams) along with your meatloaf!
