Maple Spiced Pumpkin Pancakes Recipe

Pumpkin Pancakes With Maple Spiced Yogurt Topping

Maple spiced yogurt topping

Blend together 8 ounces full fat plain yogurt, ¼ C maple syrup and ¼ t pumpkin pie spice* and serve as topping to pumpkin pancakes.

*pumpkin pie spice can be replaced with ¼ t nutmeg or cinnamon

Cooking Time

approximately 20 minutes

Yields

about 8 pancakes

Ingredients

Pumpkin Pancakes

½ cup oatmeal

½ cup Whole Spelt flour

¼ cup white spelt flour

2 T chia meal (Mila®)

1 t baking powder

1/8  t salt

½ t cinnamon, nutmeg and ginger

1 pinch clove

1 ½ t raw sugar

¾ to 1 cup plain almond milk

1 egg

6 T pumpkin puree

2 T melted butter

Directions

Combine dry ingredients in mixing bowl and set aside. Beat together egg, pumpkin, milk and melted butter.  Add liquid ingredients to well created in center of dry ingredients and stir until blended.  Do not over beat.  (Batter will have some thickness but be thin enough to pour)  Cook on lightly oiled hot griddle or heavy skillet using about 1/8 to ¼ cup batter per pancake. Cook about 3 minutes per side.  Generally pancakes are ready to flip when bubbles form on uncooked side.

Notes

*Hint: if using the same skillet that was used to melt butter for recipe, the skillet should be sufficiently oiled for cooking.
